The meal starts with an Amuse of beets & burrata with compressed melon, arugula, and mint. Beginnings include a green chili pork stew with poblano grits, cotija cheese, pickled chili radish salad; roasted mushroom & fennel tart with blistered tomatoes, baby arugula, goat cheese fondue; and ahi tuna poke with blood orange ponzu, jalapeño and charred avocado salad.
