Thirsty Lion Gastropub & Grill, the restaurant concept that opened its first Arizona restaurant at Tempe Marketplace in 2011, announced its expansion in metro Phoenix with a third location set to open Tuesday, May 3, 2016 at SanTan Village in Gilbert at 2218 E. Williams Field Rd #113. Gilbert Mayor John Lewis will begin the ribbon cutting ceremony at 10:45 a.m. and the restaurant will be open for business immediately after at 11 a.m.
“We feel that Thirsty Lion is moving into this exciting neighborhood at just the right time,” said Thirsty Lion CEO John Plew. “We’ve experienced enormous success with our first two Arizona locations and we think SanTan Village offers similar opportunities for success.” This is not only the third Arizona location for Thirsty Lion, it’s also the third location within a Macerich property.
With a prime location, Thirsty Lion will be joining SanTan Village’s, open-air, regional lifestyle mall in Gilbert that spans more than a million square feet. SanTan Village offers retail, restaurants, entertainment, office, residential and hotel uses and it’s at the cutting edge of sustainability with almost 3,000 solar panels, reduced-energy lighting and security measures, and green cleaning protocols. Thirsty Lion SanTan will feature almost 7,000 square feet of interior space including a 32-seat bar. Outside, the gastropub will boast an expansive 1500 sqft patio with 2 large fire pits with group seating and 3 flat-screens, perfect for beautiful sunshine-filled days and chillier winter and spring nights. The location will also showcase an open-air kitchen, 28 different draft offerings and a hearth-baked pizza oven, all trademarks of the Thirsty Lion brand.
Thirsty Lion’s culinary commitment is to provide an eclectic variety of cuisines, with an emphasis on local ingredients and bold flavors. A seasonal fresh sheet will focus on the changing season’s offerings, featuring unique ingredients including fresh seafood, quality meats and local vegetables and fruits.
